It's a classic Trastevere trattoria — warm, busy, full of Romans — and the pasta arrives finished tableside in a wheel of pecorino, which is theater, but it's theater in service of a genuinely perfect plate. On a cold January evening, the room full and the windows fogged, it's one of our favorite tables in the city.
What We Loved
The cacio e pepe is the whole argument — finished in the pecorino wheel, exactly right. The carbonara holds its own, and the artichokes in season are not to be skipped.
