La Matriciana is one of Rome's historic trattorias, open since 1870, and its name is a statement of intent: the amatriciana (the great Roman pasta of guanciale, tomato, and pecorino) is non-negotiable here, the dish the restaurant is effectively named for and takes with total seriousness. It's a classic, old-Rome address near the Vatican — the kind of long-running trattoria that has fed the city for over 150 years and still does the canon properly.
What We Loved
The amatriciana is the order — that's the whole point. The abbacchio alla romana (Roman-style lamb) is the classic secondo to follow it. Traditional Roman cooking with a century and a half of practice behind it.
