Septime, more than any other restaurant, defined the Paris neo-bistrot movement — the shift away from the ceremony of haute cuisine toward something lighter, fresher, and more honest. Chef Bertrand Grébaut trained as a graphic designer (his graffiti once turned up on Paris metro stations) before cooking under Joël Robuchon and Alain Passard at L'Arpège, then opened Septime on Rue de Charonne in 2011 with his childhood friend Théophile Pourriat.
It earned a Michelin star in 2014, sits regularly among the World's 50 Best, and — tellingly — runs without a traditional sommelier, because the founders wanted great natural wine without the pretension that usually comes pinned to the apron. The room is plain wood, white walls, industrial fixtures; the cooking is hyper-seasonal, mostly French-sourced, vegetable-forward. It is, as fans say, the liberation of French cuisine from its own formality.
