Sabor is where Nieves Barragán Mohacho, who built her reputation at Barrafina, set out to show what Spanish cooking could be in a restaurant entirely her own. The ground-floor counter does tapas in the Barrafina tradition. Upstairs, the Asador does wood-fired whole animals and the slow, regional cooking of Spain's interior — an entirely different proposition.
The cochinillo (suckling pig) carved tableside from the Asador is one of the most memorable dishes in London. Book the Asador upstairs and give the room proper time. The Michelin star is the recognition; the pig is the reason.
What We Loved
Two propositions in one building: the counter tapas downstairs and the Asador upstairs. The whole roasted cochinillo is the signature. Both formats are worth the visit — they're very different experiences.
