Kiln is one of the best arguments for counter seating as a format: a small room on Brewer Street where the cooking happens directly in front of you over wood fires and clay pots, and the food lands in a way that makes the proximity to the kitchen feel essential to understanding it. Ben Chapman's cooking draws from Thailand and the Shan states of Burma, but the accuracy goes beyond influence — there is depth of sourcing and technique in every dish that separates this from anything else in London's Thai category.
